AI Analyzes Fat Content in Frozen Albacore, Changing the Way We Choose Tuna

At a marine industry exhibition held in Shizuoka City, a new automated inspection system that uses ultrasound AI to analyze fat content in frozen albacore tuna was unveiled. This technology enables the world’s first non-destructive fat selection for albacore.

Compared with traditional tail-cut methods, the system can reduce inspection time by up to 80%, and chemical analysis has confirmed its higher accuracy. As a result, it improves efficiency in processing sites and helps address labor shortages. In addition, by eliminating the need to handle small fish with electric cutters, it also enhances workplace safety.

Providing objective indicators of quality and price is expected to serve as a valuable reference when consumers choose tuna at retail.

With this year’s abundant catch of fatty albacore, expectations are rising for the system’s early commercialization. Thanks to the advancement of convenient and reliable technology, a new era in which tuna can be selected more safely may soon be at hand.
