Farmed Norwegian Cod “Snow Cod” Promoted for the Japanese Market

In Japan, natural cod is typically associated with use in hot pot dishes. In contrast, Norway’s “Snow Cod,” known for its snow-white flesh suitable for sashimi and sushi, was showcased at a promotional event held at the Norwegian Embassy in Tokyo. Snow Cod is farmed Atlantic cod raised in Norway, and the initiative reflects the country’s ambition to establish it as a “second salmon,” leveraging the market analysis and marketing expertise cultivated through its salmon industry.

Domestic selling prices in Japan are expected to match or exceed those of true cod. Snow Cod is air-freighted to Japan after being landed in Norway and arrives within approximately 48 hours. It is produced without antibiotics and has obtained international certifications. One of the drivers behind the expansion of farmed cod production is the 62% reduction in Norway’s wild cod fishing quota between 2021 and 2025, which led to tight supply, rising prices, and growing market demand. Currently, Snow Cod is mainly distributed in the European market and is well-regarded for its quality, being used by top chefs.

In addition, by applying salmon aquaculture technology, Norway has begun production in large offshore cages located at depths greater than 300 meters — the first attempt of its kind worldwide. At the tasting event, various preparations such as sushi, seared roe-mayonnaise, and shabu-shabu were offered, and attendees evaluated the taste and quality while responding to a detailed questionnaire.

As a white-fleshed fish suitable for sashimi and sushi, Snow Cod is drawing attention as a new Norwegian seafood product that may follow salmon, with expectations building for its future market development.
