A new AI-based tuna grading technology, which has only recently been put to practical use in Japan, is now expected to be introduced in other major tuna-producing countries. This AI system analyzes cross-sectional images of tuna tails, combined with evaluation data from skilled professionals, to instantly grade the quality of the tuna on a scale of three to five levels.
The technology has been primarily implemented for frozen tuna and is already being used in seafood processing facilities across Japan to support tuna sales. A pilot project has also begun in Indonesia, one of the world’s top tuna-producing countries. The initiative aims to address the shortage of skilled graders and the challenge of ensuring fair compensation for fishers.
Japanese market stakeholders have commented, “We can’t judge the quality of the tuna until it arrives, so having a more accurate grading system would be very helpful.”
